Ingredients for Lobia-Aloo Masala

Cowpea pods – 250 grams
Potato – 2-3 big size
Oil – 2-3 tbsp
Finely chopped coriander – 2-3 tbsp
Ginger paste – 1 tsp
Finely chopped green chili – 2-3
Asafoetida – 1 pinch
Cumin – 1/2 tsp
Dry mango – 1/4 tsp
Red chili powder – 1/4 tsp
Turmeric powder – 1/2 tsp
Coriander powder – 1 tsp
salt – as per taste

How to make Lobia-Aloo Masala

To make cowpea-potato masala, first wash the cowpea beans thoroughly with clean water and keep them in a sieve. So that extra water comes out of it. Now we will cut the stalks from both the sides of these beans. Then cut them into small pieces and prepare them for making. After this, peel the potatoes and clean them thoroughly in water. Then cut them also in medium size.

After this, take a pan, put oil in it and heat it. After the oil is hot, add cumin and asafoetida and fry it. After roasting cumin, add turmeric powder, coriander powder, green chili and ginger paste and fry them too. After the color of the spices is good, put chopped cowpea pods and potatoes, salt and red chillies and cook the vegetable for 2-3 minutes while stirring with the help of a ladle. After that add 3-4 tbsp of water to it, cover it and leave it to cook on low flame for 5-10 minutes. However, keep checking the condition of potato cooking in between. For this, the time may be more or less. Now cook the vegetable till the potatoes become soft.

After the vegetable is cooked, add dry mango powder and green coriander to it and mix it well. Now put green coriander in this vegetable and garnish it. Now the ready-made potato-cobia bean vegetable can be served with chapatti, parantha or rice.
